• Anthocyanidins: They are responsible for the color in fruits like red, blue, and purple. Examples include Cyanidin, Delphinidin, Malvidin, Pelargonidin, and Peonidin. Anthocyanins are a form of anthocyanidins and are water soluble and produce color.

Tannins are high-molecular weight compounds and can be divided in two subcategories: esters of gallic acid or ellagic acid and proanthocyanidins. Grape seed is very rich in proanthocyanidins and this may be responsible for its many health benefits.

Phenolic acids are precursors of flavonoids. Examples of common phenolic acids include vanillic acid, gallic acid, caffeic acid and ferulic acid.

The phytochemical profile of muscadines has been documented. In muscadines, color and taste are influenced by the concentration of anthocyanin and proanthocyanidins. Presence of ellagic acid is also a major attribute of muscadines as are polyphenolics that act as inhibitors of oxidation. The total phenolics in muscadines are 5 times more concentrated in seed than in skin. The two most prominently found phenolic compounds in muscadine grape seed are catechin and epicatechin. Seeds of muscadine have the highest antioxidant activity as compared to other fruit parts due to the presence of proanthocyanidins, catechin, and epicatechin. Skin is highly enriched with ellagic acid, myricetin, quercitin, and kaempferol. Muscadine skin contains oligomeric and polymeric proanthocyanidin and anthocyanins are mainly concentrated in the muscadine skin.
